Glera From Pocenia, Italy; temperature control is very important for its fermentation and vinification; the temperature must be kept at between 18- 22°C to obtain the best of the quality of aromas. Lastly, the wine is transformed into sparkling wine, executed with care directly in the cellar. Permeates a straw yellow with fine perlage. A lightly aromatic nose of good intensity with hints of rennet apple. A very soft mouth feel underpinned with a lightly acidity; an easy-drinking wine. An aperitif wine or a base for fruit cocktails and for the end meal, it is also good with dry baked pastries.

100% Greco From Campania, Italy; Harvested late September. Grapes are soft-pressed following cold-maceration. Fermented for 15 days in temperature-controlled stainless steel containers. Aged in stainless steel containers at a controlled temperature of 14°C. Bottled in March. Hint of white flower with deep pineapple and mild butterscotch. Almost a botrytis high note like pineapple flavors with the aftertaste coming across as a little confected. Ideal with appetizers, sea food based dishes, or with fried fishes, Oysters, lobster and shellfish. Also excellent with buffalo Mozzarella and aubergine Parmigianino.

90% Sangiovese, 5% Canaiolo-Malvasia Nera-Colorino, 5% Merlot From Monti, Siena-Italy; the grapes are gathered by hand and made into wine according to strict and traditional Classico methods, then matured for at least a year in Slavonic oak barrels and in French oak “tonneaux”. After it has been bottled, it is refined for a further 3 months. The wine has a strong fruity aroma, an average structure and a good allaround acid content, rounded and well balanced. It is a perfect accompaniment to antipasti, first courses in light sauces and second course based on white meat, roast meat and even fish.

100% Nebbiola da Barolo Grapes This wine is made from grapes gathered in October. Bunches are placed in cellar, in red wooden cases. Fermentation takes place in steel vessels at temperature of 28-30oC then moved to barriques where Barolo will remain for 2 years. It presents a red ruby color with shades that make it full and intense. On the nose this is a fruity wine: raspberry, vanilla and cherry stand up among the variety of notes. It should be served in a wide crystal glass at a temperature of 18oC. Decantation is suggested two hours before serving to bring out its qualities. Best paired with grilled or stewed red meat, game meat and aged cheeses.

100% Aglianico From San Mango sul Calore, Avellino Italy; manually harvested in November, fermentation and maceration for 30 days at controlled temperature. After racking off, the wine is aged for about 18 months in oak casks then refined in bottle. Ruby red with fruity aromas and a hint of undergrowth and cinnamon. Dry, warm and smooth and soft tannins express the strength of its body.

100% Aglianico From Boscoreale – Terzigno – Pompei; the wine has deep ruby red colour, a bouquet scent of ripe red fruits and red fruits jam that melts with sweet vanilla notes due to the ageing in woods for around 5 months. In the mouth, it is full and intense with good tannic structure but also soft and silky. Best served at 18-20oC and perfectly paired with strong soups, rich first courses, roast and braised red meats and matured cheeses and salami.

100% Piedirosso From Campania, Italy; Wine made from grapes grown on the volcanic and sandy soils of the slopes of Vesuvius. They are difficult soils, with a very low yield to the vineyard, but which create a very high concentration of taste and personality of the grapes. It has a ruby red color and an intense –fruity aroma. It has a harmonic and full bodied taste that recalls ripe red fruit and plums, with also a slight hint of tobacco, coffee and spices. Ideal with Mediterranean vegetable starters or with pasta and meat sauce. Excellent with salamis and strongly-flavoured or seasoned cheeses.

80% Sangiovese; 20% Merlot From Monti in Chianti-Italia; a traditional Tuscan red, fermented in stainless steel and left to mature for 10 months, a small portion in oak and the other in cement tanks. A light scent of spice and cherry compote on the nose. On the palate, the wine has ripe red fruit flavors with a nice acidity and dry finish. Best paired with pasta, red meats and hard cheeses.

100% Coda di Volpe From Campania, Italy; harvested in early October, soft pressing, in bianco vinification and fermented at a controlled temperature. A white wine with a straw yellow color, it has an intense aromatic smell with clear hints of broom and mature fruits. It has a dry taste and it’s well bodied with a fine, pleasant and harmonic fragrance, which makes it a balanced and versatile wine. Best served at 8 10C and goes well with fish dishes, sea foods and shellfishes.

100% Fiano From Campania, Italy; this floral and aromatic white is fermented in stainless tanks before bottling and is retained in the cellar for 18 months before release, ensuring the wine’s natural characteristics come to the fore. A pale golden color in the glass. Scents of tropical fruits with hints of creaminess. On the palate, vibrant and fresh with notes of honeydew melon and citrus fruits. The finish lingers and refreshing. An excellent accompaniment to fish and sea foods.

Suggestedly good with pizza napoletana.

Two words: “Asian Food”. If I had to choose just one wine for pairing with Sichuan, Thai and Vietnamese cuisine, it’d be Moscato. It handles spicy foods with grace since alcohol levels tend to be low and sweetness tends to be high. Moscato loves aromatic spices like ginger, cinnamon, cardamom and chilli peppers. For proteins, try lighter meats like chicken and light flaky fish. That said, a sparkling Moscato would match with BBQ Pork.
